Signature Beef/Veal & Red Wine Sauces

INGREDIENTS

1. 1 bag 1 bag Pioneer® Roast Beef Gravy Mix (94544), prepared
2. 750 ml Red wine, reduced by 90% (approx. 3 oz.)

By adding just a few more ingredients, this red wine sauce can be customized many ways!

Bordelaise Sauce

Add 1 cup of shallots and 1 Tbsp. freshly ground black pepper to your Red Wine Sauce.

Mushroom Sauce

Add 1 cup of mushrooms (sliced, Sautéed), 2 Tbsp. of chopped garlic and 1 Tbsp. of black pepper to your Bordelaise Sauce.

Champignon Sauce

Add just ½ cup heavy cream and 1 Tbsp. chopped fresh herbs to your Mushroom Sauce.

INSTRUCTIONS

1. Set aside and store ½ gallon gravy for later use.
2. Add reduced red wine to remaining gravy.
