Biscuit-crusted Chicken with Jalapeno Cream Skillet Gravy

INSTRUCTIONS

  1. Prepare 3049 Conestoga™ Simple Split® Buttermilk Biscuits per package instructions.  
  2. Split biscuits and coarsely chop biscuits, then transfer to sheet pan to allow biscuits to dry out. 
  3. In a food processor, pulse biscuits until a coarse, breadcrumb-like crumb is a mixture of fine and very small pieces (less than ¼”). Allow crumbs to dry for use as breading. Alternatively, draw out moisture by baking in a low fan 300°F convection oven. 
  4. Prepare Pioneer® Roasted Jalapeno Cream Skillet Gravy Mix per package instructions. Keep warm for service. 
  5. Preheat fryer to 375°F. 
  6. Prepare Pioneer® Pre-Dip Batter Mix per package instructions and set up batter and breading station for service. 
  7. Per order, coat chicken breast in Pioneer® All Purpose Batter and Breading Mix, then into prepared Pioneer® Pre-Dip Batter, then into biscuit crumbs. Stir Pre-Dip Batter occasionally to disperse seasonings. 
  8. Drop chicken into frying basket for 3 – 7 minutes, depending on size, or until internal temperature reads 165°F. 
  9. Serve each biscuit breaded chicken with Pioneer® Jalapeno Cream Skillet Gravy.
