Whipped Goat Cheese Smoked Salmon Sandwiches

INGREDIENTS

  1. 6 Breadtown Bakery Pumpernickel Dinner Rolls, sliced and lightly toasted
  2. 8 oz. Goat cheese, softened
  3. 3 Tbsp. Heavy cream
  4. 1 Tbsp. Lemon juice
  5. 1/2 Tsp. Black pepper
  6. 8 oz. Smoked salmon, thinly sliced
  7. 1/4 cup Capers, drained
  8. 1/2 cup Pickled red onions, drained
  9. 1 cup Microgreens

INSTRUCTIONS

  1. Combine goat cheese, heavy cream, lemon juice and black pepper in a large bowl, and whip using an electric hand mixer until smooth and fl uff y, about 2-3 minutes.
  2. Spread a generous layer of goat cheese on bottom half of each roll. Top with smoked salmon, capers, pickled red onions, microgreens and top half of roll. Serve and enjoy.
