1 bag Pioneer® Western Style Pancake & Waffl e Mix
Butter substitute, for coating waffl e iron
1 3/4 gal. Vanilla ice cream
Rainbow sprinkles, for coating
Mini dark chocolate chips, for coating
Mini candy-coated chocolate gems
INSTRUCTIONS
Place 3 quarts cool water in large bowl. Add 5 lbs. Pancake & Waffle Mix, blend with wire whisk until dry mix is well-incorporated. (A slightly lumpy batter is acceptable.) Heat a 5-inch waffle iron until very hot and lightly coat with butter substitute. Working in batches, add batter to waffle iron and cook until golden-brown, about 4-6 minutes. Batter amount and cook time may vary, follow manufacturer’s instructions for best results. Allow waffles to cool completely at room temperature before filling.
Top half the waffles each evenly with 1 large scoop (roughly a heaping 1/2 cup) of ice cream. Top with remaining waffles, press gently to adhere.
Roll edges of sandwiches in sprinkles, chocolate chips or chocolate gems until ice cream is evenly coated. Serve immediately, or cover individually with plastic wrap, and freeze until ready to serve.
