Savory Mushroom Pork Medallions

INGREDIENTS

1 bag 233428 Pioneer Southern Style Brown Gravy
2 each Pork tenderloin, cut into 1” rounds
as needed Salt
as needed Pepper
2 Tbsp. Extra virgin olive oil
1 lb. Mushrooms, sliced
1 Tbsp. Butter, unsalted
4 cloves Garlic, minced
4 Tbsp. Thyme leaves, fresh
1 cup Heavy cream

Serving suggestion:
as needed Black rice, cooked
as needed Roasted carrots

INSTRUCTIONS

  1. Prepare 233428 Pioneer Southern Style Brown Gravy per package instructions. Set aside.
  2. Season sliced tenderloins in salt and pepper. Working in batches, sear the pork medallions. Set aside.
  3. In a medium sized skillet over medium-high heat, add olive oil and sauté mushrooms until mushrooms have released their liquid and the pan is dry.
  4. Add butter and minced garlic then continue to sauté until mushrooms are browned. Adjust heat as necessary. Remove from heat, add thyme and heavy cream. Mix well. Set aside.
  5. Add garlic and mushroom mixture into the prepared Pioneer Southern Style Brown Gravy. Mix well. Set aside.
  6. For service: in a medium or small saucepan, add prepared mushroom-thyme cream sauce. Finish pork medallions in mushroom-thyme cream sauce.
  7. Serve over black rice with a side of roasted carrots, and top with additional mushroom-thyme cream sauce.
