Pancake Breakfast Tacos (PACO)

Who says a breakfast taco has to be made with a tortilla? Try this simple alternative, filled with scrambled eggs and your favorite protein for a delicious change of pace.

INGREDIENTS

1. 1 bag Pioneer® Original Buttermilk Pancake & Waffle Mix (94110), prepared
2. Scrambled eggs
3. Breakfast protein (Bacon, sausage, chorizo), cooked

INSTRUCTIONS

1. Preheat griddle to 375°to 400°F. Pour or ladle pancakes to a 5 inch diameter onto a prepared griddle.
2. Flip when edges begin to dry (approximately 90 seconds) and cook for 75-90 seconds. Flip only once.
3. Place in a taco holder and let cool slightly (this will help form the taco shape).
4. Fill with scrambled eggs and the protein of your choice.
5. Serve with your signature salsa.
