Ice Cream Sandwiches

INSTRUCTIONS

1. Scoop desired amount of ice cream into bowl and let soften slightly.
2. Place one cookie (frozen) top-side down onto a sheet of parchment paper.
3. Place ice cream over the cookie and press down gently. Use a round cookie cutter or mold to help shape the ice cream.
4. Top with a second cookie, top-side up.
5. Store in an airtight container in the freezer until ready to serve.
