Chilled Avocado & Cucumber Soup

1. 1 bag Pioneer® Old Fashioned Biscuit Gravy Mix (94706), prepared
2. 4 Leeks
3. 4 Tbsp. Butter
4. 2 cups White wine
5. 8 Cucumbers, large, peeled, chopped, seeds removed
6. 4 Avocados, large, skin removed
7. 4 cups Sour cream
8. Salt
9. Black pepper
1. Slice leeks, discarding the outer green leaves. Wash thoroughly using a colander. Sauté in butter until soft. Remove from pan.
2. Deglaze the pan with the wine. Add liquid to the gravy.
3. Purée cucumbers and leeks in food processor until smooth. Add to gravy.
4. Purée avocado until smooth. Add to gravy mixture.
5. Chill soup for 2-4 hours.
6. Serve garnished with cucumber slices, avocado slices, shrimp, and a dollop of sour cream.
7. Whisk in sour cream. Season with salt and black pepper to taste.
