Chicken & Waffles with Maple Peppercorn Drizzle

INGREDIENTS

Jalapeno Waffle:
1 bag 94110 Pioneer Original Buttermilk Pancake and Waffle Mix
18 oz. Pickled jalapenos, diced

Maple Peppercorn Sauce:
1 bag 94545 Pioneer Roasted Chicken Gravy
2 cups Maple syrup
½ cup Peppercorns, crushed or whole

Batter Station:
1 bag 216558 Pioneer Pre-Dip Batter Mix
1 bag 216556 Pioneer Spicy Texas-Style Premium Batter & Breading Mix
as needed Chicken tenders

INSTRUCTIONS

  1. Preheat waffle griddle.
  2. Preheat fryer to 350°F.
  3. Prepare Pioneer Original Buttermilk Pancake and Waffle Mix according to package instructions for waffles. Add diced jalapenos when adding wet ingredients.
  4. Prepare Pioneer Roasted Chicken Gravy per package instructions. Add maple syrup and mix well. Set aside.
  5. Toast peppercorns in a saucepan over medium heat, shaking occasionally, until peppercorns are fragrant. Crush peppercorns, if whole, then add into gravy mixture. Mix until well combined. Hold hot for service.
  6. Prepare breading and batter station. Prepare Pioneer Pre-Dip Batter Mix according to package instructions. Dip chicken tenders into Pioneer Spicy Texas Style Premium Batter and Breading Mix, shaking off excess breading. Then, dip chicken tenders into Pioneer Pre-Dip Batter, allowing excess to drip off. Then, coat each chicken tender into Pioneer Spicy Texas Style Premium Batter and Breading Mix. Fry at 350°F until fully cooked, or internal temperature reaches 165°F.
  7. Prepare each waffle to order. Drizzle with maple peppercorn sauce, top with chicken tenders, drizzle with additional maple peppercorn sauce.
