Avocado Breakfast Sandwiches

INGREDIENTS
6 Breadtown Bakery 4” Brioche Burger Buns Sliced(241136), lightly toasted
1 Tbsp. Olive oil
6 Large eggs
3 Ripe avocados, sliced
1 1/2 cups Fresh arugula
2 Large tomatoes, sliced
Fresh berries, for serving
INSTRUCTIONS
Heat oil in a large skillet over medium heat. Add eggs and cook to desired doneness, about 3 minutes. Remove from heat.
Spread avocado mash evenly onto bottom halves of each bun. Layer arugula and 2 slices of tomato onto each bun.
Top with a fried egg and top bun. Serve with fresh berries.
