Avocado Breakfast Sandwiches

INGREDIENTS

  1. 6 Breadtown Bakery 4” Brioche Burger Buns Sliced(241136), lightly toasted
  2. 1 Tbsp. Olive oil
  3. 6 Large eggs
  4. 3 Ripe avocados, sliced
  5. 1 1/2 cups Fresh arugula
  6. 2 Large tomatoes, sliced
  7. Fresh berries, for serving

INSTRUCTIONS

  1. Heat oil in a large skillet over medium heat. Add eggs and cook to desired doneness, about 3 minutes. Remove from heat.
  2. Spread avocado mash evenly onto bottom halves of each bun. Layer arugula and 2 slices of tomato onto each bun.
  3. Top with a fried egg and top bun. Serve with fresh berries.
