Prepare 94013 Pioneer® Original Biscuit Mix using liquid of choice per package instructions.
Turn dough out onto a floured surface and pat down lightly.
Roll out to ½” thickness. Flour rolling pin and roll from the middle outward, using light pressure.
Cut with a 4” biscuit cutter. Do not twist the cutter. Do not use a glass or blunt edged cutter.
In the center of each biscuit, cut out a 2” biscuit using a 2” biscuit cutter.
Gently transfer dough pieces into a parchment lined baking sheet. Cover and freeze for at least an hour.
Meanwhile, prepare garlic chive butter by combining butter, parmesan cheese, chives, and garlic powder.
Par-cook bacon until just lightly browned, but not fully cooked or crisp.
Build egg-in-a-hole buttermilk biscuits by placing 2 strips of bacon in an “X” shape, 2 oz. cheddar cheese into 2” hole over the bacon, press down on cheese to create a well, and crack an egg in the well.
Bake for 13 – 17 minutes, turning halfway and until egg whites are just set.
