Truffle Pizza Bianco

INGREDIENTS

1 bag 211640 Great American Pizza Mix 24#

Truffle Sauce:
1 each 94706 Pioneer Old Fashioned Biscuit Gravy Mix
2 cups Parmesan cheese, grated
1 Tbsp. Black truffle oil
2 cups Heavy cream

Pizza Topping, Mushrooms:
1 Tbsp. Extra virgin olive oil
2 lb. Mushrooms, sliced
2 Tbsp. Butter, unsalted
½ tsp. Truffle salt
6 cloves Minced garlic
as needed Black pepper
as needed Fontina cheese, shredded
as needed Mozzarella cheese, shredded
as needed Arugula

INSTRUCTIONS

  1. Prepare Great American Pizza Mix per package instructions. Prepare desired size doughballs.
  2. Preheat preferred oven for baking pizza.
    1. 450°F for impingement oven
    2. 400°F for convection oven
    3. 450°F for deck oven
  3. Prepare Pioneer Old Fashioned Biscuit Gravy Mix per package instructions. Mix in parmesan cheese. Allow to cool.
  4. Mix in truffle oil, and heavy cream. Cool before topping pizza.
  5. In a medium sized skillet over medium-high heat, add olive oil and sauté mushrooms until mushrooms have released their liquid and the pan is dry.
  6. Add butter and minced garlic then continue to sauté until mushrooms are browned. Adjust heat as necessary. Season with truffle salt and freshly cracked black pepper.
  7. Make pizzas: Sheet dough balls to desired crust thickness. Spread truffle sauce onto pizza crust. Top with shredded cheese and arugula. Bake until pizza is cooked and cheese is browned.
    1. 450°F for impingement oven; 5 ½ minutes
    2. 400°F for convection oven; 11-15 minutes
    3. 450°F for deck oven; 8-10 minutes
