INGREDIENTS

1 bag                            Pioneer Original Buttermilk Pancake & Waffle Mix (94110)

1 bag                            Pioneer Pre-Dip Batter Mix (216558)

1 bag                            Pioneer All Purpose Batter & Breading Mix (216555)

3 ½ cups & 2 Tbsp   Water

12 oz.                           Chicken, Tenders or Breast, cut into ½ oz. pieces

1 Cup                           Maple Syrup

INSTRUCTIONS

  1. Prepare Pioneer Original Buttermilk Pancake & Waffle Mix according to package instructions for small batch and set aside in the fridge.
  2. Prepare Pioneer Pre-Dip Batter Mix according to package instructions, using ½ lb. of mix and the water.
  3. Add 2 cups of Pioneer All Purpose Batter & Breading Mix into a large bowl and dredge the chicken into the pre-dip and then follow immediately into the breading mix.
  4. Fry the chicken pieces in a fryer at 350°Ffor 5-7 minutes or until chicken reaches an internal temperature of 165°F. Set fried chicken pieces aside.
  5. Grease 2 standard muffin tins.
  6. Remove pancake & waffle batter from fridge and scoop 1 ounce of batter into each muffin cup.
  7. Place 1 piece of fried chicken into each muffin cup, on top of the pancake & waffle batter.
  8. Bake at 375°F(convection) for 10-12 minutes, or until golden brown.
  9. Remove from oven and let cool for 5 minutes.
  10. Serve with syrup for dipping.
