Loaded Savory Breakfast Egg Bites

INGREDIENTS
2 cups Pioneer Whole Grain Peppered Gravy
4 cups Spinach, chopped fresh
2 cups Breakfast Sausage, cooked & crumbled
2 cups Cheddar Cheese, shredded
12 ea. Eggs, whisked
INSTrUCTIONS
PREHEAT convection oven to 350°F. Liberally oil muffin tins.
PREPARE Pioneer Whole Grain Peppered Gravy Mix according to package instructions. Reserve 2 cups of gravy and let cool.
SAUTÉ spinach until wilted and no water remains in the pan. Set aside to cool.
COMBINE 2 cups cooled and prepared gravy mix, cheddar cheese, breakfast sausage, whisked eggs, and sautéed spinach. Scoop egg mixture into prepared muffin tins.
SPRAY aluminum foil with nonstick spray on the side touching the muffin tray and egg mixture. Cover muffin tins with aluminum foil.
BAKE mixture until internal temperature reads 165°F, about 20 minutes. Remove foil and top with cheese. Return to oven until cheese has melted.
