Signature Pork & Madeira Wine Sauces

INGREDIENTS

1. 1 bag Pioneer® Pork Roast Gravy Mix (94551), prepared
2. 750 ml Madeira wine, reduced by 90% (approx. 3 oz.)

“Combine selected ingredients with the Pork Madeira Wine Sauce base to create multiple upscale sauces.

Madeira Green Peppercorn Sauce

Add a cup red currant jelly and 1 Tbsp. crushed green peppercorns to your Pork Madeira Wine Sauce.

Rosemary Peppercorn Sauce

Just add 1 Tbsp. fresh, chopped Rosemary to your Madeira Green Peppercorn Sauce.

Creamy Apple Sauce

Add ½ cup apple juice and ½ cup heavy cream to your Rosemary Peppercorn Sauce.”

INSTRUCTIONS

1. Set aside and store ½ gallon gravy for later use.
2. Add reduced Madeira wine to remaining gravy.
