Savory Gruyere Breakfast Waffles

INGREDIENTS

  1. 1 bag Pioneer® Country Style Gravy Mix (94595)
  2. 1 bag Pioneer® Western Style Pancake & Waffle Mix (94075)
  3. 1 bunch Thyme, finely chopped
  4. 1 bunch Chives, finely chopped, plus more for garnish
  5. 3 lbs. Shredded Gruyere cheese
  6. 3 lbs. Bacon, cooked and kept warm
  7. 50 Large eggs, fried to order
  8. 12 Avocados, halved, pitted, peeled and sliced

INSTRUCTIONS

  1. Bring 3 quarts of water to a full rolling boil.
  2. Combine 1 quart of cool tap water and 1 package of Gravy Mix in a separate container. Mix with a wire whisk until lump-free.
  3. Pour Gravy Mix into boiling water. Cook until gravy comes to a boil. Simmer for 1 minute while stirring constantly. Remove from heat and stir in thyme. Maintain internal gravy temperature at 165°F during service.
  4. Place 3 quarts cool water in large bowl. Add 5 lbs. Pancake Mix, chives and cheese, and blend with wire whisk until dry mix is well-incorporated. (A slightly lumpy batter is acceptable.) Heat a 10-inch waffl e iron until very hot and lightly coat with butter substitute. Working in batches, add batter to waffl e iron and cook until golden-brown, about 4-6 minutes. Batter amount and cook time may vary, follow manufacturer’s instructions for best results.
  5. Top each waffl e with 1-2 oz. gravy, 2 slices bacon, 1 fried egg and a few slices of avocado. Garnish with additional chives.
