Pork Chili

INGREDIENTS

1. 1 bag Pioneer® Pork Roast Gravy Mix (94551)
2. 4 qt. Water
3. 6 lb. Pork roast, cubed
4. ⅓ cup Vegetable oil
5. 4 lb. Bacon, cooked, chopped
6. 60 oz. Chili beans, do not drain
7. 60 oz. Kidney beans, do not drain
8. 60 oz. Diced tomatoes, do not drain
9. 8 Jalapeños, seeded, diced
10. 4 Onions, diced
11. 4 Garlic cloves, minced
12. 48 oz. Light beer
13. Chili seasoning
14. Salt
15. Black Pepper

INSTRUCTIONS

1. Prepare gravy mix according to package directions, using 4 qt. of water.
2. Sear pork in oil in a large skillet over high heat. Cook until browned on all sides.
3. Add pork, bacon, beans, tomatoes, and jalapeños to gravy mixture, stirring to incorporate.
4. Sauté onions and garlic in same pan as pork, adding additional oil if necessary. Sauté until just beginning to become translucent. Add to gravy mixture.
5. Add chili seasoning, and season with salt and black pepper.
6. Simmer on low heat for 1 hour, stirring occasionally.
7. Deglaze pan with beer. Simmer until liquid is reduced by half. Add to gravy mixture.
8. Serve with optional shredded cheddar cheese and/or corn chips.
