Pimento Cheese, Bacon and Pepper Jelly Sandwich

INGREDIENTS

  • 4 Pioneer Simple Split Waffle Biscuits (240114)
  • Butter Substitute, for brushing
  • 2 cups Shredded Cheddar Cheese
  • 1/2 cup Cream Cheese, room temperature
  • 2/3 cup Jarred Diced Pimentos, drained
  • 4 slices Bacon, cooked and crumbled
  • 1/4 tsp Worcestershire sauce
  • Salt & Pepper, to taste
  • 1/4 cup Red Pepper Jelly

INSTRUCTIONS

  1. Allow Pioneer Simple Split Waffle Biscuits to stand at room temperature for a minimum of 2 hours. Waffle biscuits can also be refrigerated up to 36 hours prior to baking.
  2. Preheat a standard oven to 425°F, or convection oven to 350°F. Line a rimmed baking sheet with parchment paper. Place waffle biscuits on a prepared baking sheet and brush with butter substitute. Bake in a standard oven for 4-5 minutes, or a convection oven for 5-6 minutes. Remove from oven. Split the waffle biscuits in half.
  3. In a large bowl, mix the cheddar cheese, cream cheese, pimentos, bacon and worcestershire sauce until combined. Season with salt and pepper to taste.
  4. Spread the pimento cheese evenly over bottom halves of the waffle biscuits, and the pepper jelly evenly over the top halves of waffle biscuits. Place the top halves of the waffle biscuits on the pimento cheese.
  5. Place the sandwiches on prepared baking sheet and bake until pimento cheese is hot and melted, about 1-2 minutes.
