Loaded Baked Potato Soup

Everything you love about a loaded baked potato in a deliciously creamy soup.

INGREDIENTS

1. 1 bag Pioneer® Country Skillet Cream Gravy Mix (96115)
2. 2 cups Onion, chopped
3. 2 tsp. Garlic, minced
4. ½ cup Butter
5. 1 lb. Bacon
6. 5 lb. Potatoes, baked, skinned, and cubed
7. 1 Tbsp. Chicken base
8. 24 oz. Cheddar cheese, shredded
9. 12 oz. Sour cream
10. 2 cups Chicken Stock or water
11. 1 cup Green onions, chopped

INSTRUCTIONS

1. Prepare gravy mix according to package directions.
2. Sauté onions and garlic in butter until soft. Do not brown.
3. Cook bacon until slightly crisp. Drain. Chop and set aside.
4. Add Sautéed mixture, potatoes, chicken base, cheese, sour cream, and water or stock to prepared gravy.
5. Simmer for 10 minutes, stirring frequently to prevent sticking.
6. Add green onions and simmer 5 additional minutes.
7. Stir until blended.
