Fresh Veggie Sandwich

INGREDIENTS

  1. 12 slices Breadtown Bakery Wheatberry Pullman, lightly toasted
  2. 1 Lime, juiced
  3. 2 Tbsp. Olive oil
  4. 1/2 Tsp. Kosher salt
  5. 1/4 Tsp. Black pepper
  6. 2 cups Shredded purple cabbage
  7. 3 Ripe avocados, mashed
  8. 3 Large tomatoes, sliced
  9. 1 1/2 cups Bean sprouts
  10. 1 English cucumber, sliced

INSTRUCTIONS

  1. Whisk together lime juice, olive oil, salt and pepper in a large bowl. Add cabbage and toss to coat. Let sit for at least 10 minutes.
  2. Spread avocado onto half of the slices of wheatberry bread. Top each with 2 slices of tomato, sprouts, cucumber slices and a generous portion of purple cabbage slaw. Top with remaining slices of bread and serve.
