INGREDIENTS

1. 1 bag Pioneer® Old Fashioned Biscuit Gravy Mix (94706), prepared
2. 128 Conestoga® Extra Crisp English Muffins (215957)
3. 8 oz. Gruyère cheese, shredded
4. 8 oz. Parmesan cheese, shredded
5. 1 tsp. White Pepper
6. 1 tsp. nutmeg
7. 8 oz. Dijon mustard
8. 16 lb. Virginia ham, cut into 2 oz. slices
9. 64 oz. Gruyère cheese, shredded
10. 64 oz. Parmesan cheese, shredded

INSTRUCTIONS

1. Preheat oven to 350°F.
2. Add 8 oz. Gruyère cheese, 8 oz. Parmesan cheese, white pepper, and nutmeg to prepared gravy and stir to incorporate. Place on a steam table during service.
3. Toast English muffins until lightly browned.
4. Brush each muffin half lightly with Dijon mustard.
5. Place ½ oz. Gruyère cheese over ham and top with muffin top.
6. Ladle 1 oz. of cheese sauce over the top of the sandwich.
7. Top each muffin bottom with a 2 oz. slice of Virginia ham.
8. Sprinkle ½ oz. of Parmesan cheese over the cheese sauce.
9. Bake for 5 minutes. Broil for 2-5 minutes, until cheese is lightly browned.
