Preheat conventional oven to 400°F (350°F convection oven). Add 4 cups water to mixing bowl. Add muffin mix to water. Mix with paddle attachment on speed 1 for 30 seconds. Stop the mixer and scrape down sides of the bowl and the paddle with a rubber spatula. Mix with paddle attachment on speed 1 for an additional 30 seconds. Prepare muffin pans by spraying with food release or lining with muffin cups. Fill each muffin mold with batter nearly full (within ¼” of the top). Bake in preheated conventional oven for 25 minutes (18 minutes in a convection oven). Remove from oven and allow to cool slightly before removing from pans.
