Pour 3 gallons of water into a 40 to 80 qt. mixing bowl. Add 25 lbs. of White Wings Corn Tortilla Mix. Mix on low speed for 2 minutes or until dough forms a ball. Add additional water if needed to soften dough. Shape dough into 1-ounce dough balls. Cover with a damp towel to prevent drying. Place each dough ball between two sheets of waxed paper. Roll out or press in a tortilla press to a 5-inch circle. Carefully peel off waxed paper. Cook on a hot ungreased griddle (400°F-425°F) for approximately 1-2 minutes on each side.
