PREHEAT GRIDDLE TO 365°F TO 400°F. Put 12 1/2 cups cool water in large mixing bowl. Add 5 lbs. Pancake Mix, blend with wire whisk until dry mix is well incorporated. (A slightly lumpy batter is acceptable.) Pour or ladle pancake mix to a 5-inch diameter on griddle. Flip pancakes when edges begin to dry (1½ minutes). FLIP ONLY ONCE.
