Preheat oven to 400°F (350°F convection oven). Pour 5 cups cool water into mixing bowl. Add 5 lbs. mix and mix with paddle on low speed for 30 seconds. Scrape down paddle and bowl. Mix with paddle on low speed for 30 seconds. Let batter rest 5 minutes. Stir down batter. Scoop batter into greased muffin pans using #20 scoop. Bake CONVECTION OVEN: 12-15 minutes. STANDARD OVEN: 18-20 minutes.
