Bring 6 quarts of water or chicken broth to a boil in a 3 gallon pot. Add dumplings and seasoning packet. Stir to combine. Cover partially with a lid and simmer for 1 hour. Add 2 lbs. of diced chicken and simmer for 15 to 30 minutes more until dumplings are tender.
