Place the following in VCM mixer: 25 lb. flour plus one (2 lb.) bag premix plus 2½ lb. shortening. Dry blend for 45 seconds. Add 1½ gallons (6 quarts) plus 2 cups of water. Mix for 2½ minutes. Weigh dough into 3½ lb. pieces and cover with a plastic bag. Divide and round the 3½ lb. piece into 36 bolitas and then cover with a plastic bag and let rest at least 30 minutes. Press tortillas as usual. Do not flatten doughball before pressing. Preheat ungreased griddle to 400°F – 425°F, cook 1 to 2 minutes on each side.
