Measure 175 oz. (1 gal. & 6 cups) water into mixing bowl. Add 25 lb. bag of tortilla mix. Mix 1 minute on low speed with a dough hook. Mix 4 minutes on medium speed. Turn the dough onto a lightly floured surface and knead by hand until smooth (approximately 5 minutes). Cover the dough and let stand for 15 minutes. Divide dough into 11/2 ounce balls. Cover with a damp cloth to keep from drying. On a floured surface roll each ball into a 6 or 7 inch circle. Bake on a hot griddle (400-425°F) for 30 seconds on each side.
