Add 5 quarts water to the Mixing bowl. Add 25# bag of tortilla mix to the water. Mix for 6 minutes on low. Add ½ cup water if dry. Let rest for 15 minutes. Portion out dough balls and place on sheet pan. Wrap with film. When ready to divide, place on divider/rounder tray and roll out so dough is evenly spread on tray. Insert into divider/rounder and divide to desired size and round. Remove tray and place dough balls on a sheet pan and cover. Press dough when ready and cook at 450°F.
