PREPARATION INSTRUCTIONS

For 80 Tortillas use 1 quart water and 5 lbs. mix. For 400 Tortillas use 5 ½ quarts of water and 25 lbs. of mix.
Machine Mixing: Pour water into a 12 or 60-qt. mixing bowl; add tortilla mix. Mix with a dough hook 1 minute at low speed (#1); then 4 minutes more on medium speed (#2). Hand Mixing: Use a sturdy spoon or your hands, mix until dough forms a ball; knead 5 minutes on lightly floured surface. Cover dough and let rest 15 to 30 minutes. Shape into 1 1/2 ounce balls. Cover with a damp towel to prevent drying; let rest 30 minutes to 1 hour. Preheat ungreased griddle to 400°F – 425°F. Roll out on floured surface or press in a tortilla press to a 6 or 7-inch circle. Cook 1 to 2 minutes on each side.
