Add 13.0 lb water at 80°F to bowl. Add 0.2 lb SAF yeast. Mix 7 minutes on low speed 1. Leave on bench covered for 20 minutes. Cut and place in proofer overnight up to 48 hours. Remove from cooler; shape by hand and/or sheet to desired diameter crust. Dock, sauce, top, and bake.
