PREPARATION INSTRUCTIONS

Blend 25 lbs. flour and 2 lbs. Pre-Mix for 5 minutes on low speed. Add 3 ¾ pounds vegetable shortening and MIX for 10 minutes on low speed. Add 5 ¾ quarts of water and mix for 3 minutes on low speed, then 5 minutes on medium speed. Cut dough into 3½ pound balls and cover with plastic wrap. Let dough sit for 20 minutes. Weigh out and roll the tortilla dough balls (bolitas) to desired size. Cover with plastic wrap. Let dough balls sit for 30 minutes. Preheat ungreased griddle to 400°F – 425°F. Roll out on floured surface or press in a tortilla press to a 6 or 7-inch circle. Cook 1 to 2 minutes on each side.
