Vegetarian Potato Casserole

This loaded baked potato-inspired casserole makes for a flavorful side dish that everyone will love.

INGREDIENTS

1. 1 bag Pioneer® Plant-Based Sausage Gravy, prepared (233362)
2. 10 lb. Frozen hash browns, thawed
3. 2 cups Sour cream
4. 1 lb. Cheddar cheese, shredded
5. 2 tsp. Salt
6. 2 tsp. Pepper
7. ½ cup Butter, melted
8. 1 bunch Chives, chopped

INSTRUCTIONS

1. Preheat oven to 375°F (convection 325°F).
2. Combine gravy, sour cream, cheese, salt, and pepper in a large bowl. Add potatoes and mix well.
3. Spread mixture into a shallow hotel pan that has been sprayed with pan release. Press down slightly.
4. Drizzle melted butter over the potato mixture.
5. Bake for 60-75 minutes (50-60 convection). Potatoes should be crispy around the edges and tender in the center.
6. Keep warm during service. Serve garnished with chives.
