Pumpkin-Coconut Bisque

Puréed pumpkin and coconut milk give this cold soup a tasty place on your tables.

  • 1 bag Pioneer® Cream Soup Base & Sauce Starter Mix
  • 4 qt. Coconut milk
  • lb. Pumpkin, canned, puréed
  • 3 cups Sugar
  • 3 Tbsp. Salt
  • Toasted coconut


  • Prepare soup base according to package directions, substituting coconut milk for water.
  • Combine remaining ingredients and whisk to incorporate thoroughly.
  • Chill soup over an ice bath to cool completely.
  • Serve chilled, garnished with toasted coconut.
