Place 128 oz. (1 gallon) warm water in mixing bowl first. Add 20 lbs. Tortilla mix. Mix on low speed for 2 minutes. Stop mixer and test dough for dryness. If dough is too dry, add 2 oz. warm water. Mix on low speed for 5 more minutes. Let dough rest for 15-20 minutes. Make into 7 – 3 ½ lb. doughballs. Roll out on equipment as usual and bake on a hot griddle (400-425°F) for 30 seconds on each side.
