PREPARATION INSTRUCTIONS

Instant Yeast Method: Measure 38 fl. oz. water into mixing bowl. Add 5 lbs. mix; blend for 1 minute on speed 1 while adding 1/2 cup instant dry yeast. Compressed Yeast Method: Measure 35 fl. oz. water into mixing bowl. Add 4 oz. compressed yeast; blend together and allow to set. Add 5 lbs. mix and blend for 1 minute on speed 1. Active Dry Yeast Method: Measure 38 fl. oz. water into mixing bowl. Add 1/2 cup active dry yeast; blend together and allow to set. Add 5 lbs. mix and blend for 1 minute on speed 1. Mix for 8-10 minutes on speed 2, or until the dough picks up from the sides of the bowl. Scale dough and allow it to rest for approximately 45 minutes @ 85°F-90ºF. Mold dough into rolls and proof for approximately 45-60 minutes @ 85°F-90°F. Bake @ 425°F in conventional oven for 12-15 minutes or @ 350°F in convection oven for 10 minutes.
