Ice Cream Pie

Use CookieTree® Thaw & Serve Cookies as the pie shell for this easy-to-make dessert.

Ingredients

  • 4 CookieTree® Gourmet Double Fudge Cookies (225010)
  • ¼ lb. Butter, melted
  • 1 qt. Vanilla ice cream, softened
  • 4 oz. English toffee candy bar, crushed, or pecans

Instructions

  • Thaw CookieTree® Double Fudge Cookies.
  • Place cookies in a food processor and pulse until a crumb texture is obtained.
  • With machine running, pour melted butter over the cookie crumbs and process until evenly mixed.
  • Press the cookie mixture into the bottom and up the sides of a 9-inch pie pan.
  • Place the pie shell in the freezer for 30 minutes.
  • Spoon softened ice cream into pie shell. Use a sheet of plastic wrap to press the ice cream gently into shell.
  • Top with candy or pecans and fudge as desired; freeze until ready to serve.
