Hearty Beef Burger and Vegetable Soup

Have left over hamburger patties and vegetables? Use Pioneer® Low Sodium Roasted Beef Gravy mix made with Whole Grain to offer your students a delicious and hearty soup while saving food costs!

Servings 36 (approximate)

Ingredients

  • 5 qt. 2 cups Water
  • 13 oz. Pioneer® Low Sodium Roasted Beef Gravy mix made with Whole Grain (212646)
  • tsp. Dried thyme
  • 24 Cooked beef patties, cut into ¾" pieces
  • 6 cups Frozen carrot slices, thawed
  • 6 cups Frozen green beans, thawed
  • cups Frozen peas, thawed
  • cups Frozen corn, thawed

Instructions

  • Boil 4½ quarts water in a large soup pot. Whisk Pioneer® Low Sodium Roasted Beef Gravy mix made with Whole Grain and thyme with 1 quart cool water in a medium bowl until smooth. Stir into boiling water. Let simmer 5 minutes or until mixture has thickened.
  • Stir in remaining ingredients, simmer 15 minutes or until heated through before serving. Keep at 165°F during service.

Notes

For Grades 9 to 12: Increase serving size to 1¼ cups; makes 30 servings.
Serve with one of our whole grain biscuit (3078, 216110, 210498, 3043, or 215812)
