Signature Beef/Veal & Red Wine Sauces

These deliciously versatile beef-friendly sauces are easily made by combining a red wine reduction with our roast beef gravy mix. Add more ingredients to this classic base to create a signature sauce.
Red Wine Reduction

Ingredients

  • 1 bag 1 bag Pioneer® Roast Beef Gravy Mix (94544), prepared
  • 750 ml Red wine, reduced by 90% (approx. 3 oz.)

Instructions

  • Set aside and store ½ gallon gravy for later use.
  • Add reduced red wine to remaining gravy.

Notes

By adding just a few more ingredients, this red wine sauce can be customized many ways!
Bordelaise Sauce
Add 1 cup of shallots and 1 Tbsp. freshly ground black pepper to your Red Wine Sauce.
Mushroom Sauce
Add 1 cup of mushrooms (sliced, sautéed), 2 Tbsp. of chopped garlic and 1 Tbsp. of black pepper to your Bordelaise Sauce. 
Champignon Sauce
Add just ½ cup heavy cream and 1 Tbsp. chopped fresh herbs to your Mushroom Sauce.
